Today's Harvest


It's December 4th and I just came in with today's garden harvest. It was time to get the rest of the carrots before the ground freezes; by the firmness of the soil it won't be much longer.


Most of the carrots are small, but that's o.k.;

these carrots were a late sowing and were sown among the cilantro and the caraway. These carrots will be stored with the dirt on them to keep them fresh. They smell wonderful, both the carrot root and the green tops. Those green tops will be used in green drinks, giving a flavor of a hint of summer along with all their nutrients.


While I was digging I found some salad burnet and some arugula, along with a small head of red cabbage!



Red cabbage is an antioxidant king! It has 6 times the antioxidants then green cabbage, however, all cabbage is one of our most nutritious foods.


Here is a Couple of Ways You Can Use Cabbage.

Chop cabbage and saute it in olive oil flavored with garlic and add it to stir-frys.

or

Saute red or green cabbage with red, orange or purple carrots for a colorful nutrient rich dish.
