Beetroot Dip
Nutrient Dense Dip
2 large beetroots, cubed
1 bunch of coriander or 1 tsp. dried coriander
2 TBS apple cider vinegar
2 cups of walnuts
1/4 cup of nutritional yeast
1/3 cup of pumpkin seeds
1 tsp. Himalayan pink salt or sea salt
1/3 cup flax seed oil or hemp seed oil
2 cloves of garlic
fresh lemon juice from 12 lemon
coconut yogurt or plain yogurt (optional)
Place beetroots in oven for 15-20 minutes to soften
Once beetroots cool, place in food processor or Nutribullet along with all other ingredients. Blend until smooth.
Serve with veggies or healthy bread or crackers
