Ginger Pumpkin Butter

So good on toast, pancakes or muffins
2 cups pureed Pumpkin or squash
1/2 cup Rice Syrup
1 Tbsp grated Lemon Rind
1 Tbsp Lemon Juice
Dash of Sea Salt
Juice from 1 Tbsp
Dash of Cinnamon
Combine all ingredients and stir well
Place over low heat, simmer for approxiamtely 30 minutes, stirring frequently until quite thick
Pour into jars until ready to use
